Double chocolate cupcakes



  1. Preheat the oven to 180ºC.
  2. Start by grinding the avocado together with the yogurt, the date, the EVO and the vegetable drink.
  3. Add the whipped egg and mix.
  4. Mix the oatmeal with the cocoa powder, the yeast and a pinch of salt and we mix all together.
  5. Chop the chocolate tablet and incorporate it into the dough.
  6. Put the mixture into individual muffin molds, filling 3/4 of them, and bake it for 20′.
  7. To prepare the frosting, mix all the ingredients with the help of a kitchen robot or a mixer until we obtain a fine textured homogeneous table.
  8. When the muffins are ready, let them cool down before putting them in the frosting.
  9. To decorate them use a piping bag, and as a topping use some chopped almonds. Refrigerate so that the frosting finishes solidifying a little more, and ready to enjoy with a good coffee!
